How to Make Cake Mix Cookies
Cake mix cookies are seriously one of the easiest recipes to make with just 3 steps:
- Step 1: Make the cookie dough: Combine cake mix, eggs and oil in a medium bowl to form the cookie dough.
- Step 2: Form dough balls: Use a soup spoon or cookie dough scoop to make 1 1/2-inch balls spaced 2 inches apart on the baking sheet.
- Step 3: Bake: It should only take 15 minutes at 350°F, and place the baking sheet in the lower-middle rack of the oven.
It’s helpful to have a wire rack to let the cookies cool after baking. Then you can eat them as is, or add some decorations.
Favorite Decorating Combinations of Cake Mix Cookies
Here are a few of my favorite combos when making cake mix cookies:
- Red Velvet cake mix with melted white chocolate or white chocolate chips (pictured here)
- Devil’s Food cake mix with white chocolate chips
- White cake mix with melted semisweet chocolate
Tips and Secrets for Making the Best Cake Mix Cookies
- Any kind of cake mix will work. Box sizes range from 15 – 18 oz and they should all work fine although I generally prefer Betty Crocker.
- You can accessorize using various icings, sprinkles, chocolate chips, nuts, coconut and beyond. The sky is the limit!
- Melted chocolate has the best flavor for icing, but you can also use a tube of decorating gel or icing.
- Use a cookie dough scoop to quickly make the dough into balls. Do not flatten the dough before baking, as the cookies will be too thin.
- If you prefer sugar-free cookies, you can use sugar-free cake mix or try making our popular 3 Ingredient Banana OAT Chocolate Chip Cookies.
Ice Cream Cookie Sandwiches
Don’t forget about the potential to make these cake mix cookies into ice cream sandwiches! While you’re letting the cookies cool slightly after baking, remove your favorite ice cream from the freezer to soften slightly.
Place a large scoop between the bottoms of two cake mix cookies, and press together so the ice cream is about an inch thick.
You can freeze the ice cream sandwiches for up to a week before serving, although we like them fresh out of the oven.
