Ice Cream Sandwich Cake is one of the best summer desserts with layers of ice cream sandwiches and whipped topping. People go absolutely crazy for it! The best part? You only need 15 minutes of prep and can make it ahead of time.
This easy ice cream sandwich cake is a crowd-pleaser that always gets rave reviews. It’s an ice cream cake made with ice cream sandwiches, perfect for birthdays, potlucks and parties.
Here we used a red, white and blue color combination for Memorial Day and 4th of July celebrations. However, you can customize the flavors, colors and toppings to suit any occasion! So feel free to get creative and get the kids involved too.
HOW TO MAKE ICE CREAM SANDWICH CAKE
You only need a few ingredients to make the best ice cream sandwich cake:
- Ice cream sandwiches: large rectangular ice cream sandwiches, or make your own!
- Cool Whip: frozen whipped topping that’s been thawed
- Instant pudding mix: helps stabilize the Cool Whip
- Optional: Food colors
- Optional Toppings: sprinkles, crushed oreos, M&Ms, chopped nuts, fudge sauce, caramel sauce
For a lighter option, use reduced fat Cool Whip and low-fat ice cream sandwiches like Skinny Cow.
Remember to let the assembled cake freeze solid for at least 2 hours, and then take it out to warm for 20 minutes before serving to soften so it’s easy to cut.
To make a different ice cream cake recipe with ice cream sandwiches, try these fun variations:
- Oreo ice cream sandwich cake: Crumble 8-10 oreo cookies and sprinkle on top.
- Neapolitan ice cream sandwich cake: Instead of whipped topping and pudding mix, make layers with softened ice creams (strawberry, chocolate and peppermint flavors) between the sandwiches.
- Heath bar ice cream sandwich cake: Crumble 4-5 Heath bars (Skor bars) and sprinkle on top.

Ice Cream Sandwich Cake {Red, White & Blue}
Ingredients
- 12 ice cream sandwiches
- 16 oz Frozen whipped topping, 2 containers, thawed (see note)
- 5 oz instant vanilla pudding mix, 140 grams
- food coloring, red, blue colors (optional)
- sprinkles, red, white & blue colors or chocolate/other
Instructions
- Set aside a rectangular serving platter or 9x13 pan.
- In a large bowl, whisk the whipped topping and pudding mix together until combined.
- Optional for colors: Spoon the mixture into three medium bowls of roughly equal amounts. To the first bowl, add two drops of red food coloring and mix until combined. To the second bowl, add two drops of blue food coloring and mix until combined.
- Place 4 ice cream sandwiches on prepared serving platter, and spread the first color of whipped topping evenly on top.
- Repeat with 4 more ice cream sandwiches and the second color of whipped topping.
- Repeat with 4 more ice creams sandwiches and the third color of whipped topping.
- Using a spatula, frost the top and sides with the rest of the whipped topping.
- Decorate with sprinkles.
- Cover with parchment or wax paper and freeze for at least 2 hours. Remove from the freezer 15 minutes before serving to soften slightly.
Notes
- Cool Whip is recommended for the best results. You can also substitute two cups of whipping cream whipped to stiff peaks (freeze an extra hour to firm up).
