This Fruity Pebbles Fried Ice Cream is vanilla ice cream infused with Fruity Pebbles cereal and deep fried to crispy perfection. The perfect was to get your Fruity Pebbles fix!
Fruity Pebbles has a way of appearing in wacky State Fair desserts, which have helped inspire this Fruity Pebbles ice cream. If you’ve ever had deep fried ice cream, it’s flash fried in hot oil to form a crispy outside while the middle stays cool and creamy.
Here we’ve used Fruity Pebbles cereal to coat the ice cream for a pop of color and flavor. It’s better than any restaurant version and is ready in minutes!
How to Make Fruity Pebbles Ice Cream
Ice an ice cream scoop or cookie scoop to form 1 1/2 inch balls. Roll them in cereal to form a thick even coating. Then place them on a parchment-lined baking sheet to freeze for at least 30 minutes until hard.
Fill a deep fryer or medium saucepan with 3 inches of oil and heat to 375°F. Remove ice cream balls from the freezer and gently lowers them 1-2 at a time into the hot oil. Fry for no more than 10 seconds and then remove to a paper-towel lined plate. Repeat for the remaining balls.

Fruity Pebbles Fried Ice Cream
Ingredients
- 2 cups Fruity Pebbles cereal
- 6 scoops vanilla ice cream, about 1 pint
- 1 quart oil, for frying
- whipped cream, optional garnish
Instructions
- Line a baking sheet with parchment paper. Place the Fruity Pebbles on a large plate and reserve.
- Use an ice cream scoop or cookie scoop to make 1 1/2-inch balls of ice cream. Quickly roll ice cream balls in Fruity Pebbles and place on the prepared baking sheet. Freeze immediately for at least 30 minutes or until hard.
- Meanwhile, fill a deep fryer or medium saucepan with 3 inches of oil and heat to 375°F. Line a plate with paper towel and set aside.
- Remove the balls from the freezer. Using a slotted spoon, lower 2 balls into the hot oil and fry for 10 seconds. Remove to the prepared plate and repeat for the remaining 4 balls.
- Garnish with whipped cream and serve immediately.
Notes
- If the ice cream starts to melt after being scooped, you can freeze it for 10 minutes before rolling in cereal.
