Cannoli French Toast Rollups

These Cannoli French Toast Rollups are stuffed with a delicious ricotta filling, rolled up and pan fried until golden. Perfect for breakfast or brunch!
For days when regular french toast will not cut it, try making this cannoli french toast! It’s guaranteed to please with its creamy filling and chocolatey flavors.
We love to make these rollups for a leisurely weekend breakfast or brunch. They’re also fabulous when you’re entertaining including around Easter and Mother’s Day holidays. Serve them dusted with powdered sugar or maple syrup and fresh berries for a winning presentation.
How to Make Cannoli French Toast
Step 1: Make the filling by combining the ricotta cheese and chocolate chips in a medium bowl. Then spread it onto slices of sandwich bread.
Step 2: Make the french toast dipping liquid by combining egg, milk, cinnamon, sugar and vanilla in a bowl. Dip the bread slices and then pan fry in a nonstick skillet over medium heat.
Step 3: Serve warm dusted with powdered sugar with fresh berries if desired.

Cannoli French Toast Rollups
Ingredients
Filling
- 1/2 cup ricotta cheese
- 1/4 cup chocolate chips
- 2 tbsp powdered sugar, divided - optional
French Toast
- 8 slices sandwich bread, white or whole wheat
- 1 large egg
- 1/4 cup milk
- 1 tsp sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 2 tbsp butter
Instructions
- Make the filling: To a medium bowl, add ricotta cheese, chocolate chips and 1 tbsp optional powdered sugar. Stir until combined and set aside.
- Cut the crusts off your bread slices. Then flatten with a rolling pin.
- Spread one tablespoon of filling onto each slice of bread.
- In another medium bowl, whisk together egg, milk, sugar, cinnamon and vanilla.
- Place a nonstick skillet onto medium-high heat and add the butter. Roll up one slice of bread and dip into the egg mixture. Place in the hot pan and repeat for remaining slices until the pan is full.
- Cook 2-3 minutes, turning the rollups so they brown evenly on all sides.
- Remove to a plate and dust with optional powdered sugar to serve.
