How to Make Bacon Onion Rings
To make bacon onion rings, you’r simply slicing a large yellow or white onion into rings about 1/2-inch wide. Then wrap each ring with two strips of bacon to look like this:
Next, you’ll be making the Doritos crust. Pulverize the chips by placing in a ziptop bag and pounding into coarse crumbs using a mallet or rolling pin. You can also use a food processor or blender if you prefer.
Now brush each bacon onion ring with lightly beaten egg and dredge in the Doritos crumbs to form the crust. Bake for about 25 minutes in the lower third of a 375°F oven.
The goal is to cook the bacon through without browning the chips too much in order to get a nice golden color.
