The easiest, most unbelievably delicious Instant Pot Honey Garlic Chicken With Vegetables. It’s one of my favorite Instant Pot recipes: succulent chicken cooked in honey, garlic, soy sauce and mixed vegetables for a complete meal that's ready in 20 minutes.

Chicken and Vegetables
1 1/2poundschicken thighsbone-in, skin on
1poundbaby red potatoeshalved
fresh parsleychopped, for serving optional
salt and pepper to taste
Honey Garlic Sauce
1/2cupsoy saucelow sodium recommended
1/4cupketchup or tomato paste
In a small bowl, whisk together honey, soy sauce, ketchup and oregano. Reserve.
Set the Instant Pot to Sauté mode. When hot add the olive oil and chicken thighs skin-side down.
Sauté for 2 minutes until lightly browned. Then turn the pieces and sauté again on the other side.
Add the minced garlic and sauté for 30 seconds. Then add the potatoes, carrots and onions followed by the reserved sauce.
Cover the Instant Pot and select the Manual setting with High Pressure for 10 minutes.
When the cycle is complete, following the manufacturer's safety precautions, open the Quick Release knob and wait a minute for the pressure to come down.
Carefully remove the cover. Season with salt and pepper and garnish with optional fresh parsley. Serve and enjoy!
