Sweet Potato Fritters
Delicious DIY fritters made with sweet potatoes

- 1 large sweet potato
- 1/4 cup all-purpose flour
- 1/4 tsp sea salt
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 1 egg
- 1 quart oil for frying
- 1/4 cup greek yogurt optional
- 1/4 cup ketchup optional
Fill a medium saucepan with water and bring to a boil. In the meantime, peel sweet potato and cut into 1-inch chunks.
Boil sweet potato for 15 minutes. Remove from water and in a small bowl mash into a puree. Set aside.
In another bowl, combine flour, sea salt, paprika and garlic powder.
To the sweet potato mash, mix in egg. Then stir in flour mixture.
Add oil to a medium saucepan or deep fryer and heat to 375ºF. Drop in spoonfuls of sweet potato batter in 6-8 at a time and cook for 3 minutes.
Remove fritters from oil, place on a paper towel lined plate. Sprinkle on sea salt to taste. Serve with optional dipping sauces and enjoy!
