Strawberry Cheesecake Salad In Pineapple Boats

  • 1 large pineapple
  • 8 ounces cream cheese softened
  • ½ cup sugar
  • 8 ounces vanilla yogurt
  • 2 cups strawberries hulled and quartered
  • 1 banana sliced


  • Cut pineapple in half. Use a sharp knife to hollow out both halves (rough cut is fine).
  • Remove spine from the flesh and then cut remaining meat into bite-size pieces. Set aside.
  • In a medium bowl, beat cream cheese, sugar, and vanilla yogurt until smooth.
  • Mix in pineapple, banana and strawberries, reserving about a dozen strawberry pieces for decoration.
  • Add fruit mix to pineapple halves until just full. Decorate with remaining strawberries. Serve immediately and enjoy!
