Strawberry Cheesecake Salad In Pineapple Boats

- 1 large pineapple
- 8 ounces cream cheese softened
- ½ cup sugar
- 8 ounces vanilla yogurt
- 2 cups strawberries hulled and quartered
- 1 banana sliced
Cut pineapple in half. Use a sharp knife to hollow out both halves (rough cut is fine).
Remove spine from the flesh and then cut remaining meat into bite-size pieces. Set aside.
In a medium bowl, beat cream cheese, sugar, and vanilla yogurt until smooth.
Mix in pineapple, banana and strawberries, reserving about a dozen strawberry pieces for decoration.
Add fruit mix to pineapple halves until just full. Decorate with remaining strawberries. Serve immediately and enjoy!
