Watermelon Mojitos (with Video)
A refreshing summer cocktail made with rum, mint, watermelon and lime.

- 3 cups watermelon balls seedless recommended (see note)
- 1/4 cup mint leaves about 5 sprigs
- 2 limes
- 1/4 cup sugar
- 10 oz white rum about 1 cup
- 24 oz sparkling water 1.5 liters
- 4 cups crushed ice or ice cubes
Slice the watermelon in half and use a 1-inch melon baller to scoop out the flesh into a bowl until you have approximately 4 cups. Set aside.
Roll your limes on a work surface using the palm of your hand (this will make them juicier). Cut the first lime into chunks. Cut the second lime into half-moon wedges. Reserve.
Add the lime chunks, mint leaves and sugar to a pitcher.
Using a mint muddler or the handle of a wooden spoon, gently muddle the mint for about 30 seconds to release its flavors. Take care not to crush the mint, which will make it bitter.
Add the watermelon balls to the pitcher until 1/3 full. Add sparkling water until 3/4 full. Stir several times with a long wooden spoon. Then top with ice to fill.
When ready to serve, pour the mojitos into highball glasses and spoon in the watermelon balls.
Garnish with lime wedges and serve immediately.
- A 1/2 watermelon is sufficient. You can also substitute cantaloupe or honeydew melon or use a combination.
