Easy Shrimp Lo Mein
This Garlic Shrimp Lo Mein is loaded with succulent shrimp, fresh vegetables and lo mein noodles. It comes together in about 20 minutes and is so much better than takeout. Simple, fast and delicious!
- 1 pound raw shrimp 21-25 size, peeled, deveined and thawed
- 8 oz lo mein noodles or spaghetti or linguini
- 1 tbsp vegetable oil
- 1 tbsp garlic minced
- 1 medium carrot shredded
- 3 cups cabbage and celery slices
- 1 tsp Asian sesame oil
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1/4 cup brown sugar
- 1/2 tsp ground ginger
Thaw your shrimp if they are still frozen and get vegetables ready.
Prepare the noodles according to the package directions.
In a small bowl, whisk together 1/4 cup soy sauce, hoisin sauce, brown sugar and ginger. Set aside.
Place a large skillet over medium-high heat and add vegetable oil.
Add minced garlic, sliced carrots, cabbage and celery to the pan. Stir fry for about 5 minutes until almost tender.
Add in the shrimp and stir fry another 2-3 minutes until they just turn pink.
Drain the noodles and add to the shrimp/vegetable mixture.
Toss together with the reserved sauce and finally the Asian sesame oil. Serve and enjoy!
