Ingredients

  • 2/3 cup rolled oats old fashioned oats
  • 1/2 cup peanut butter
  • 1/2 cup peanuts
  • 2 tbsp flaxseed meal optional
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup chocolate chips
  • 2 tbsp M&Ms

Instructions

  • Add rolled oats, peanut butter, peanuts and flaxseed meal to a food processor. Pulse several times until pulverized.
  • Turn the pulverized ingredients into a mixing bowl.
  • Stir in maple syrup, vanilla extract, chocolate chips and coconut. It should form a dough-like texture.
  • Scoop a heaping tablespoon and roll between the palms of your hands to make a 1-1 1/2 inch (3-4 cm) ball.
  • Place onto a parchment-lined plate and repeat for remaining dough.
  • Chill in an airtight container until serving.

Notes

  • You can make peanut butter energy bites up to one week ahead of time. Store in an airtight container in the fridge, or freeze for up to 3 months.
  • To make chocolate peanut butter energy balls, add 2 oz (1/4 cup) melted semisweet chocolate instead of the maple syrup.
