Watermelon Mojitos (with Video)

A refreshing summer cocktail made with rum, mint, watermelon and lime.

Ingredients

  • 3 cups watermelon balls seedless recommended (see note)
  • 1/4 cup mint leaves about 5 sprigs
  • 2 limes
  • 1/4 cup sugar
  • 10 oz white rum about 1 cup
  • 24 oz sparkling water 1.5 liters
  • 4 cups crushed ice or ice cubes

Instructions

  • Slice the watermelon in half and use a 1-inch melon baller to scoop out the flesh into a bowl until you have approximately 4 cups. Set aside.
  • Roll your limes on a work surface using the palm of your hand (this will make them juicier). Cut the first lime into chunks. Cut the second lime into half-moon wedges. Reserve.
  • Add the lime chunks, mint leaves and sugar to a pitcher.
  • Using a mint muddler or the handle of a wooden spoon, gently muddle the mint for about 30 seconds to release its flavors. Take care not to crush the mint, which will make it bitter.
  • Add the watermelon balls to the pitcher until 1/3 full. Add sparkling water until 3/4 full. Stir several times with a long wooden spoon. Then top with ice to fill.
  • When ready to serve, pour the mojitos into highball glasses and spoon in the watermelon balls.
  • Garnish with lime wedges and serve immediately.

Notes

  • A 1/2 watermelon is sufficient. You can also substitute cantaloupe or honeydew melon or use a combination.
