Orange Chicken Meal Prep

Ingredients

  • 2 large boneless skinless chicken breasts cubed
  • 1 medium orange
  • 1 egg
  • salt and pepper to taste
  • 2 cups all-purpose flour
  • 2 cups vegetable oil
  • 1 cup water
  • 1/3 cup white sugar
  • 3 tbsp cornstarch mixed with 3 tbsp water

Instructions

  • To a medium mixing bowl, add cubed chicken, zest of half an orange, egg, salt and pepper. Mix well and set aside for 15 minutes to marinate.
  • Coat the marinated chicken with flour, shaking off the excess.
  • Place oil in a medium saucepan or deep fryer and heat to 350˚F. 
  • Deep fry the chicken pieces in batches for 3-4 minutes each until golden brown. Remove to a paper towel lined plate.
  • In a skillet, add 1 cup water, juice of the orange (about 2 tbsp) and sugar. Bring to a boil.
  • Mix the cornstarch with 3 tbsp water to make a slurry. Add to the pan to thicken the sauce and stir constantly until thickened.
  • Add in the chicken and toss to coat. Serve and enjoy!
