- 36 tater tots
- 1/2 cup ham diced
- 1/2 cup bell peppers diced
- 7 large eggs
- 1/4 cup milk
- 1/4 cup shredded cheddar cheese
- salt and pepper to taste
Preheat oven to 400F degrees. Grease a 12-cup muffin pan liberally.
Place 3 frozen tater tots in the bottom of each muffin tin and bake for 10 minutes to get them soft.
Remove from the oven, and use a fork to press the tots down to form a crust. Return to oven and bake 5 more minutes. Remove from oven.
Reduce oven temperature to 350F. Top each cup with a 1/2 tablespoon of diced ham and 1/2 tablespoon of diced peppers.
Whisk eggs and milk together, and fill each muffin tin nearly to the top with the mixture.
Sprinkle with shredded cheese and bake for 20 minutes, or until eggs are cooked through. Serve and enjoy!
