Omelet Breakfast Bites

  • 36 tater tots
  • 1/2 cup ham diced
  • 1/2 cup bell peppers diced
  • 7 large eggs
  • 1/4 cup milk
  • 1/4 cup shredded cheddar cheese
  • salt and pepper to taste


  • Preheat oven to 400F degrees. Grease a 12-cup muffin pan liberally.
  • Place 3 frozen tater tots in the bottom of each muffin tin and bake for 10 minutes to get them soft.
  • Remove from the oven, and use a fork to press the tots down to form a crust. Return to oven and bake 5 more minutes. Remove from oven.
  • Reduce oven temperature to 350F. Top each cup with a 1/2 tablespoon of diced ham and 1/2 tablespoon of diced peppers.
  • Whisk eggs and milk together, and fill each muffin tin nearly to the top with the mixture.
  • Sprinkle with shredded cheese and bake for 20 minutes, or until eggs are cooked through. Serve and enjoy!
