Cannoli French Toast Rollups

Filling
- 1/2 cup ricotta cheese
- 1/4 cup chocolate chips
- 2 tbsp powdered sugar divided - optional
French Toast
- 8 slices sandwich bread white or whole wheat
- 1 large egg
- 1/4 cup milk
- 1 tsp sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- 2 tbsp butter
Make the filling: To a medium bowl, add ricotta cheese, chocolate chips and 1 tbsp optional powdered sugar. Stir until combined and set aside.
Cut the crusts off your bread slices. Then flatten with a rolling pin.
Spread one tablespoon of filling onto each slice of bread.
In another medium bowl, whisk together egg, milk, sugar, cinnamon and vanilla.
Place a nonstick skillet onto medium-high heat and add the butter. Roll up one slice of bread and dip into the egg mixture. Place in the hot pan and repeat for remaining slices until the pan is full.
Cook 2-3 minutes, turning the rollups so they brown evenly on all sides.
Remove to a plate and dust with optional powdered sugar to serve.
