Heirloom Tomato Salad in Frico Cups (with Video)
A fabulous party appetizer that's delicious and healthy!

Servings: 12 servings
- 1 pound cherry heirloom tomatoes quartered
- 1/3 cup roasted red bell pepper chopped
- 2 tbsp capers
- 1/4 cup fresh parsley chopped
- 2 tbsp olive oil
- 1 lemon juiced and zested
- salt and pepper to taste
- 2 cups grated parmesan cheese
- zest of 1 small lemon
- 1/3 cup goat cheese crumbled
Preheat oven to 375F degrees. Place a nonstick baking mat or parchment paper onto a baking sheet. Set aside.
In a large bowl, mix together tomatoes, bell pepper, capers, parsley, olive oil, lemon juice &zest, salt & pepper.
Sprinkle parmesan into twelve 4-inch rounds about ¼-inch high. Bake for about 8 min or until lightly golden.
Remove from oven, remove rounds with a spatula and press into muffin pan to form cups; let cool for several minutes.
Remove cups to a cutting board or plate and fill with tomato mixture. Sprinkle on goat cheese. Serve & enjoy!
