Rainbow Ice Cream Squares

- 1 cup almonds whole or chopped
- 1 cup pitted dates
- 1 cup coconut flakes
- 1 tsp salt
- 6 cups vanilla ice cream softened
- 3 food colors red, blue, yellow
Base
In a food processor or blender, blend almonds, coconut flakes and salt for about 5 seconds. Add the pitted dates blend several seconds more.
Line a 5x9 inch loaf pan with wax or parchment paper. Press mixture into bottom and place in freezer.
Rainbow Ice Cream
Separate the ice cream into 3 small bowls and add 2-3 drops of color to each, mixing until colors become vibrant.
Spoon ice cream into the loaf pan over top of the base. Press and swirl together to create a tie dye effect.
Freeze at least 2-3 hours before slicing. Serve and enjoy!
