Rainbow Ice Cream Squares

Colorful, no-bake dessert squares

Ingredients

  • 1 cup almonds whole or chopped
  • 1 cup pitted dates
  • 1 cup coconut flakes
  • 1 tsp salt
  • 6 cups vanilla ice cream softened
  • 3 food colors red, blue, yellow

Instructions

Base

  • In a food processor or blender, blend almonds, coconut flakes and salt for about 5 seconds. Add the pitted dates blend several seconds more.
  • Line a 5x9 inch loaf pan with wax or parchment paper. Press mixture into bottom and place in freezer.

Rainbow Ice Cream

  • Separate the ice cream into 3 small bowls and add 2-3 drops of color to each, mixing until colors become vibrant.
  • Spoon ice cream into the loaf pan over top of the base. Press and swirl together to create a tie dye effect.
  • Freeze at least 2-3 hours before slicing. Serve and enjoy!
