They’re perfect for snacks, dessert buffets, afternoon tea, DIY gifts and more. You only need a few ingredients to make them. So let’s get started!

What Kind of Ice Cube Tray Is Best?

There are several options to avoid sticking. The first is to use a rigid ice cube tray with curved corners (not angled corners). The second is to use a flexible silicone ice cube tray (usually a square shape).

The choice really depends on what you want your truffles to look like when they’re done.

How to Make Ice Cube Tray Chocolate Truffles

The chocolate maketh the truffle, so start with high-quality chocolate chips or baking chocolate such as Baker’s or Ghirardelli. We melted it in the microwave, but a double boiler on the stovetop works just as well.

Drizzle the melted chocolate into the ice cube tray to fill halfway. Sprinkle a few fillings on top and then cover with remaining chocolate to fill. It’s can be a messy job, but that will not affect the final truffles.

Ideas for Truffle Fillings

We used almond pieces, coconut flakes and pomegranate arils as fillings. Other choices include: pistachios, pecans, hazelnuts, caramel and peanut butter. If you use fresh fruits such as strawberries, the truffles should be consumed within one day.

Ice Cube Tray Chocolate Truffles

These Ice Cube Tray Chocolate Truffles are smooth and creamy with irresistible fillings! They're easy to make using an ice cube tray and perfect as a do-it-yourself gift idea for friends and family.

Total Time: 2 hours 15 minutes
Servings: 8 servings

Ingredients 

  • 16 oz chocolate chips, dark, white or milk chocolate

Fillings (optional)

  • almonds, slivered or chopped
  • coconut, flakes or shredded
  • pomegranate arils

Instructions 

  • Put the chocolate chips into a microwaveable bowl. Microwave in 20-second intervals, stirring each time until smooth.
  • Drizzle the melted chocolate into each ice cube mold until half full.
  • Add the fillings on top of the chocolate to suit your taste. Only add a few pieces to the middle of each mold. Then spoon the remaining melted chocolate on top to cover.
  • Freeze for 1 to 2 hours (or alternatively, you can chill for 4 hours).
  • Invert the ice cube tray on a cutting board or work surface. Rap it several times to unmold, banging with a mug or the bottom of a glass if needed. If they don't unmold, wait 10 minutes to warm slightly and then try again.

Notes

  • Make Ahead: These chocolates will keep for up to 2 weeks in an airtight container in a cool place. You can also freeze them for up to 3 months in a resealable plastic bag.
